|When feeding a large family, my biggest desire is to feed healthy and nutritious food. But I also have limited time to spend in food preparation so easy and quick are important too. I have found that roasting via our oven is a great way to accomplish these goals. Most vegetables can be roasted in the oven in large quantities and produce delicious side dishes. Below is a typical meal for us, all using the oven for roasting.
Here is roasted cabbage. I threw in a few other veggies that were cut up for other purposes but never used. Mostly carrots and celery. Any other compatible odds and ends would work if you had them lying around. Drizzle with olive oil, salt and pepper and any other spices you like. The after picture is after about 30 minutes of roasting in the oven at 350F.
This is fresh broccoli. You cut off the flowerets and then peel the stem section with a vegetable peeler and thinly slice it and mix it in too. Drizzle with olive oil, salt and pepper and roast. This dish takes about 20 minutes in the oven at 350F and the broccoli turns out perfect every time: done but still crunchy, with a lovely caramelization for extra flavor.
I cover the cooked veggies with cookie sheets to keep the veggies warm while we get the fish cooked. Keeps them nice and steamy and ready to serve when the fish comes out.
Here is wild-caught flounder that we’ve seasoned with salt and pepper, onion and garlic powders, a sprinkling if paprika and a wee bit of thyme. Busy moms have no time to measure, so just put them on in amounts that look good to your eye.
You really cannot overdo it, I promise. Then top with sliced onions and you’re ready to go. I use parchment paper under the fish to keep it from sticking and making a big mess to scrub. For efficiency’s sake, I prep the cabbage and get it in the oven. While that’s going, I get the broccoli prepared and then get it in the oven. That takes about 10 minutes, which covers the extra 10 minutes that the cabbage needs to be in the oven anyway.
Then after the broccoli is in, you have another 20 minutes to get your fish ready. After the veggies are out and covered, turn up the oven to 550F and get your fish in. It only takes about 10 minutes for the fish and that gives you time to make drinks and get the table set for dinner.
Quick and easy, gluten-free and paleo-friendly. And super do-able for moms of not only large families, but all moms who want to feed their kids well, and not for much cost!
